Pirate Ringo's Scampi Pasta in cast iron skillet

Ingredients
 1 lb jumpo shrimp, frozen or fresh, deveined, cleaned, and shells removed
 ¼ cup Pirate Ringo's Original Salsa (or more if you like)
 1 lb package of linguine
 ¾ cup white wine
 6 tbsp butter
 6 tbsp olive oil
 3 tsp minced garlic
 2 tbsp lemon juice
 3 tbsp chopped parsley
 shredded parmesan cheese (optional, for topping)
Directions

Boil the pasta according to package directions, drain and set aside.

Melt 1 tbsp of the butter and 1 tbsp of oil in a large skillet. Add the shrimp and saute for 3-4 minutes ('till shrimp are cooked and opaque in color). Remove the shrimp from the skillet and set aside.

In the same skillet, add remaining oil and butter (wait 'till they melt together). Add in the garlic and 2 tbsp of the parsley and saute for 30 seconds. Then add in the salsa, lemon juice, and wine. Let this simmer on low heat 'till the sauce starts to bubble.

Add the cooked shrimp and sauté another minute over medium heat. Add in the pasta and toss to combine.

Top with remaining parsley and optional parmesan cheese.
